Spinach Risotto

Everyone seems to have explored the chef within during the lockdown and so did I ๐Ÿ˜Š . Small joys of life, I would say! More family time ~ cooking together and eating together. Being a working mum, I can say thatโ€™s a blessing. As most of the weekdays none of the meals were taken together as a family during the normal times.

Since I have a toddler, so most of the time I am looking for a recipe that we all can have and I can avoid cooking separate meals. Sharing one of my experiment recipes, which has now become our all time favourite ~ Spinach Risotto. An easy and delicious option to have your greens ๐Ÿฅฌ๐Ÿฅฌ

Spinach Risotto

Ingredients

  • 1cup Rissotto Rice
  • 1 tablespoon olive oil
  • Vegetable stock
  • 100g spinach leaves *
  • 2 tablespoon pine nuts *
  • 1/4 cup cheddar cheese *
  • Few basil leaves
  • Feta cheese
  • Black Pepper
  • Salt (optional)

*Quantity can be changed as per the taste.

Method

  1. You can either use a large saucepan or an instant pot
  2. If using instant pot, put on the sautรฉ mode
  3. Add olive oil and when oil heats add Risotto
  4. Fry a little bit on medium heat
  5. Add few spoons of vegetable stock and let the rice soak the stock for some time
  6. Add rest of the stock
  7. If using the instant pot then put in pressure for 8 minutes or let the rice cook in the saucepan for 20-25 minutes (depending if you prefer al dente or fully done)
  8. On the side wilt spinach leaves in olive oil
  9. Once cooled add spinach, olive oil, pine nuts, cheddar cheese, few basil leaves (if basil not available you can leave), black pepper, salt (if you prefer) and puree everything together.
  10. If using Instant pot then let the cooker be closed for another 14 minutes after the pressure cooking stops and then manually release the pressure. If you prefer al dente, then release the pressure in 7 minutes.
  11. Now add the spinach purรฉe to the cooked risotto rice
  12. Mix crumbled feta cheese and the Spinach Risotto is ready!

Tips:

  • I take out the risotto after step 11 for my two year old as she finds the taste of feta a bit strong. But it totally depends on your child’s taste.
  • Since this is for my daughter as well, hence I prefer fully done as compared to al dente.
  • Also, I don’t add salt as cheddar and feta have enough to give the taste. But, its up to you if you prefer more salty taste.
