Blackberry, Raspberry & Walnut Salad with Tofu dressing

I am not sure how is it going on for you, but working from home for this long is surely making me a couch potato. Hence, I am trying to switch my lunches to salads.

Sharing one such recipe which turned out to be really good.

Ingredients

Salad

  • Green Lettuce – Three to four leaves
  • Watercress – A handful
  • Raspberries (as per taste)
  • Blackberries (as per taste)
  • 1/4 Cucumber
  • 50g walnuts

Dressing

  • 100g Tofu
  • 4 – 5 tbs French Dressing
  • 1/2 tbs castor sugar

Method

  1. Roast walnuts either in the oven (200C for 3-4 minutes) or in the non-stick pan
  2. Cut cucumber in half lengthways and then in half moon slices
  3. Remove stems of watercress
  4. Drain and dry tofu using kitchen towel
  5. Blend tofu, french dressing and castor sugar to make salad dressing
  6. Mix Cucumber and watercress in a bowl
  7. Now, arrange the lettuce leaves on the plate
  8. Add cucumber and watercress mixture on top of the leaves
  9. Scatter blackberries, blueberries and walnut and serve with dressing

Tips:

  • If you prefer dressing mixed with salad then you can mix the dressing in step 6 with cucumber and watercress
